Sweet Potato, Carrot and Red Curry Soup

As a chef, I love using traditional Fall foods, but it’s even more satisfying when we can add an Urban Plates twist and create a new food memory. This Fall, we’re created a new flavor profile on the classic seasonal produce of locally-grown sweet potatoes, carrots, and onions. To the roasted vegetables we’ve added a classic Asian base of Red Thai Curry, Lemongrass, Kaffir Lime leaves, Ginger, Garlic and Cilantro. We finish this soup by pureeing it with a splash of rice wine vinegar that gives it a velvety smooth taste. These wonderful flavors are well balanced, so the end result is a creamy, sweet and savory soup that finishes with a hint of Jalapeno. Try a cup or bowl with one of our hand-carved sandwiches for lunch.

Orange Cherry Habanero Mint Replenisher

Fall Menu - Soup & Replenishers Even though summer is over, I still like to create really flavorful Replenishers for our guests. The Orange Cherry Habanero Mint is a pairing of one of my favorite fruits, the orange, with the sweet and slightly tart cherry resulting in one of our brightest, fruit-flavored Replenishers. Cherries deliver a rich sweet-tart characteristic with a depth of texture unusual for the juice of fruits. The flavor pairs well with the softer, tartness of fresh orange juice. This combination allows sweet and tart to occur simultaneously and harmoniously. The addition of fresh Habanero pepper adds a floral note and intense spice that balances the flavors, while fresh mint adds an additional natural sweetness. The blended beverage results in a dark, rich red color with flecks of green mint leaves. You’ll find it has a lightly sweet taste with a hint of spice that’s perfect for a refreshing pick me up. It also provides a great immunity boost for the changing weather.

Passion Fruit, Coconut, and Lime Replenisher

Even though it’s Fall, my heart is still in sunny Southern California. That means we still need a refreshingly flavorful drink — our version of the Virgin Pina Colada. The beautiful Passion fruit comes into season in California during September. The pulp of the subtropical Passion Fruit is just below the cottony white peel and is highly aromatic with a tropical sweet tart flavor. You can also taste the nuances of pineapple, papaya, mango, citrus and guava. Coconut adds a tropical sweet flavor and body, from the soft white inner coconut flesh. Lime juice is the most aromatic citrus juice, and it adds floral tartness. The focused flavors of coconut and lime juice blended with the tropical complexities of the passion fruit help make the integrated concoction more complex and silky. As soon as you take your first sip, you’ll absorb its aromatic tropical essence.
